Carrot & Coconut Soup
Ingredients:-
500g onions
1.5kg carrots
1 block grated coconut
75g vegan bouillon
4ltrs water
10ml olive oil.
Instructions:-
– Wash, peel & chop carrots
– Peel & chop onions
– Fry onions & carrots until soft
– Add water & vegan bouillon
– Bring to the boil & simmer
– Blend & add coconut
– Season to taste
– Top with grated coconut & sprinkle of paprika
